In Aspres, learners are welcomed at the Caves Byrrh. This choice owes nothing to chance.
Historically, the company materializes the development of sweet Roussillon wines through the aperitif to cinchona, which has long constituted an essential outlet for sweet wines from Rivesaltais.
The Community of Communes of Aspres, owner of the premises, has taken the turn towards wine tourism with renovated buildings for a modern welcome. Faithful to the past even in the projection and augmented reality animations, it illustrates the transition of the Roussillon vineyard towards welcoming and sharing with the public.
The Byrrh institution, with its deliciously old-fashioned charm, speaks of heritage but also of a time of global influence which is reflected in the modernity of the structure created to promote it.

Our human-sized campus is located at the heart of the regional wine heritage. The Byrrh Caves are full of stories, smells and immersive experiences. This is what makes IRS so unique: training in a center of excellence, in a unique setting, in complete immersion in the largest vineyard in the world and French wine history.

THE ASPRES
Discover a territory with contrasting landscapes where heritage and gastronomy mingle. The “Aspres” (“arid” lands in Catalan) extend from the foot of Canigou, in harmonious hills to the Roussillon plain and offer magnificent views as far as the Mediterranean Sea.

In the plain, the landscape is covered with vineyards, orchards and olive trees... the hinterland alternates between forests of century-old cork oaks and scrubland dotted with thyme, lavender and rosemary where it is pleasant to stroll while relaxing. leaving you intoxicated by all these subtle scents.
HERITAGE SIDE
Terroir side
On the Heritage side, the discovery of its small villages full of charm having preserved their authenticity, via small winding roads through cork oak forests, will enchant you. Take the time to stop there and you will spot here and there a Romanesque church or the ruins of an old castle steeped in history.
You will notably discover Castelnou, this medieval village classified as one of the most beautiful villages in France.
THUIR: CULTURAL AND FESTIVE CITY
Located just 16 km from Perpignan, accessible by public transport, this city offers numerous activities and cultural events throughout the year. Thuir celebrates music, dance, theater, the arts, the festive traditions of Catalonia, street arts, but also and above all gastronomy and wine...
Birthplace of the famous aperitif "Byrrh", don't hesitate to find it therethe largest oak vat in the world which is a true technical feat with its capacity of 1,000,200 liters.!
